Okie Chili

Ingredients

  • 2 lbs ground beef

  • 1 1/2 tsp salt (optional)

  • 1/2 tsp ground black pepper

  • 2 1/2 T. MoxMexMix

  • 3 cups chicken broth

  • 3 cups beef broth

  • 1 medium red onion (chopped and sauteed in a bit of oil with a dash of salt & pepper)

  • 1 tsp minced, fresh garlic

  • 1 can diced tomatoes

  • 1/2 can tomato paste

  • 1 can mild green chilis

Directions

*Note: Best cooking method is a cast iron, enamel pot.

  1. Brown hamburger meat and drain grease.

  2. Add broth (can partially substitute for beef if you prefer beer in your chili).

  3. Add 2 T. of the MoxMexMix, salt, pepper, tomatoes, onion and garlic.

  4. Bring to 9 bubble boil (low heat), cover and cook for 1 hour.

  5. Add tomato paste, green chilis and the remaining 1/2 T. of MoxMexMix.

  6. Cook uncovered on low until thickened; At least 30 minutes, stirring regularly to avoid burning.

  7. Serve with FIXIN’S!

For spicier Okie Chili, add 1/2 tsp of cayenne pepper or chipotle pepper powder, and substitute mild green chilis for hot green chilis.
